Sweet Chilli Chicken

This might be the easiest recipe I’ve ever made, and the kids just attacked and ate it all up immediately. Do try it. It’s just great.

Sweet Chilli Chicken/ Tofu

(Original recipe from Dinner at the Zoo – I love her blog, check it out)

1/2 kg bite-size chicken piece, boneless (or tofu pieces)

2 eggs, lightly beaten

Salt and pepper, to taste

1/2 cup all-purpose flour

1/2 cup cornstarch

Oil, for deep frying

3/4 cup Thai-style sweet chilli sauce. (Its really easy to make at home, or you can use store bought)

Crushed chilli pepper, to taste

Spring onion greens, chopped, for garnish

Get the oil in a deep pan on a medium heat.

Mix the eggs, salt and pepper in a medium bowl.

Mix the flour and cornstarch in a separate bowl.

Dip the chicken pieces in the egg mixture and then the flour mixture and then deep fry.

When golden brown and cooked through, about 5 minutes, remove with a slotted spoon to a paper lined plate to drain.

Mix the pieces with the Thai sweet chilli sauce. Garnish with spring onion greens. Serve warm over noodles or rice.

I also made myself a tofu version. And served it with a spring onion and garlic fried rice.
