Raspberry Jam Bars

….or “any other jam” bars.

Make this now. It’s so so goooooooooood……

Jam Bars

(Original Recipe from Once Upon a Chef)

1 cup all purpose flour

1/2 cup almonds

1/4 cup rolled oats

1/2 cup grated coconut

1/4 tsp baking powder

1/4 tsp salt

1/2 cup softened butter

1/2 cup sugar

1/4 cup brown sugar

1 large egg

1/2 cup jam, preferably tart.

Preheat oven to 180 deg C.

Blend together flour, almonds, coconut, oats, salt and baking powder into a fine sand-like texture.

In a separate bowl, beat together the butter and the two sugars until light and creamy. And the eggs and beat until combined. Add the dry mixture and fold in completely.

Prepare a square baking tray lined with aluminum foil, on the bottom and sides.

Scoop in 2/3rd of the dough into the bottom of the tray and smooth out as much as possible into an even base. Spread the jam evenly over the base. Try to leave a small boundary around the edges, so the jam won’t stick to the foil.

Top the jam with dollops of the remaining dough.

Bake for 35 minutes. The topping will be golden brown. Remove from oven and allow to cool for 15 minutes. Cut into bars and serve warm.
