Funnel Cakes

We first had funnel cakes at Epcot Center in Disney World. We were hooked ever since. When we came home, I had to find a good recipe for that. These are delicious and crisp and sweet and light.

Funnel Cakes

(original recipe from Saveur’s Tippaleipä, a Finnish funnel cake)

2 tbsp sugar

1 tsp salt

3 eggs

Zest of one lemon

1 cup whole milk

2 cups all-purpose flour

Vegetable oil, or a neutral oil, for frying

Confectioner’s sugar, for dusting

Heat oil to a 2″ depth in a saucepan.

Whisk together sugar, salt, eggs and lemon zest. Alternate adding a bit of flour and milk, until a smooth batter forms. Transfer the batter to a piping bag.

Swirl the batter into the oil in a circular motion. Fry, flipping once, until golden and crisp. Transfer to a paper-lined plate to drain. Repeat with remaining batter.

Allow to cool slightly. Dust with confectioners sugar.

Serve warm.
