This is the ultimate oatmeal cookie recipe. You will never need another one after this!
You could eliminate the salt, and make it plain. Or add raisins or chocolate chips. Be creative.
Salted Oatmeal Cookies
- 3 cups quick cooking oats
- 1 cup softened butter
- 1 cup white sugar
- 1 cup brown sugar
- 2 cups all purpose flour
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp salt
- 1 1/2 tsp ground cinnamon
- 1-2 tsp sea salt, for topping (optional)
- 1/2 cup chocolate chips (optional)
- 1/2 cup raisins/ cranberries (optional)
In a medium bowl, cream together butter and both sugars.
Beat in the eggs, one at a time and then stir in vanilla until combined.
Combine flour, baking soda, salt and cinnamon in a separate bowl.
Stir into the egg mixture. Mix in the oats, and chocolate chips or raisins (if using).
Cover and chill dough for at least an hour.
Preheat oven to 190 deg C.
Grease cookie sheets. Roll dough into walnut sized balls and place 2″ apart on the cookie sheets.
Flatten each cookie with a fork dipped in sugar. Top with sea salt, if using.
Bake 8-10 minutes and let cool on cookie sheets for 5 minutes before transferring to a wire rack to cool completely.
