We make pizza at home for Sunday dinner every week. Everything from scratch except the pizza sauce. Until I happened to chance upon this one, after trying tons of others.

- 1 can whole peeled tomatoes (28 oz)
- 2 garlic cloves, grated (or more if you like garlic)
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tbsp red chilli flakes
- Salt, to taste
- 2 sprigs Basil, with leaves and stems
- 1 yellow onion, peeled and cut in half
- 1 tsp sugar
Purée the tomatoes until partially smooth, but not very large chunks.
Heat a skillet over medium. Add the butter and oil. When butter is melted, add the garlic, chilli flakes and salt and cook, about 3 minutes, until fragrant.
Add the tomatoes, basil, onion halves and sugar. Bring it to a simmer, set heat at low and stir occasionally and allow to cook for an hour. Until reduced by half.
Discard the onion halves and basil stems. Season to taste with salt. Allow to cool and store in an airtight container in the refrigerator for up to 2 weeks.
