Easy Fluffy Pancakes

This is fourth in my series of pancakes. When it comes to pancakes, there’s no one recipe that you’ll make every single time. So its good to have as many recipes as you can under your belt, and you can rotate them depending on the time you have, the ingredients you have on hand and the people you are making it for 🙂

Easy Fluffy Pancakes

(From Chocolates and Chai)

1 cup all-purpose flour

2 tsp baking powder

2 tbsp sugar

3/4 cup + 2 tbsp milk

1 large egg, beaten

2 tbsp melted butter, room temperature

1 tsp vanilla extract

A pinch of salt

Mix all the dry ingredients together.

Mix all the wet ingredients together in a separate bowl.

Combine the dry ingredients together with the wet ingredients. The batter will be lumpy but make sure all the dry ingredients are well hydrated.

Heat a skillet on medium. Add some butter, when it stops foaming, ladle in 1/4 cup fulls of batter onto the pan. When small bubbles appear on the surface, use a flat rubber spatula to flip them over. Cook for another minute and then transfer to a plate. Repeat until all the batter has been used up.
