Oats and Banana Pancakes

This is as simple as it can get. I loved the blog I got it from – she has some super simple recipes. And really, this couldn’t be healthier. So easy, healthy and my kids loved it. Tough to beat, right?

Oats and Banana Pancakes

(from Mums’ Days)

  • 1 cup rolled oats
  • 1 cup milk
  • 2 eggs
  • 1 ripe banana

Mix all the ingredients together until smooth, in a food processor or blender.

Pour 1/4 cup-fulls onto a heated non-stick pan. When small bubbles appear, turn over with a flat spatula. Cook for a furthe minute on the other side. Serve warm with syrup, or the topping of your choice.

    Going to make it for my house guests tomorrow for breakfast and they are going to think I’m so cool making healthy pancakes from scratch !!
