Chickpea Salad

One of the nicer places in Chennai to eat and shop is Amethyst. The property is lovely and has an old house that has been converted to a restaurant, a clothing/ book shop and a flower shop. The restaurant is located in an outdoor patio, looking out onto lovely gardens. It’s extremely rare in Chennai to have outdoor seating, and still be cool and lovely. I love eating here, and sometimes just having tea and catching up with friends. Their store on the first floor has some of the best books anywhere in Chennai.

The same management has another restaurant-shop complex, Chamiers, that has its own unique ambience, and some great food. We go there quite often, usually for breakfast, but sometimes for lunch. The salads at Chamiers are quite superb. My favorite has got to be this chickpea salad – bursting with flavor and all my favorite ingredients. This recipe is my own recreation of the flavors, and it’s pretty darn close to theirs.

Chickpea Salad

  • 2 cups cooked chickpeas
  • 1/2 cup feta cheese
  • 1/2 cup chopped olives
  • 1 cup chopped cucumbers
  • 1 cup chopped tomatoes

For the dressing:

  • 1/4 cup yellow mustard
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp lemon/ lime juice

Mix all the ingredients for the dressing together, and stir to combine fully.

Combine all the ingredients for the salad. Pour the dressing over the salad, give it a good stir to make sure all the dressing is evenly distributed. Let the salad sit for 10-15 minutes before serving. Enjoy 🙂
